Avocado Chicken Salad

Avocado Chicken Salad


Ingredients:
3 c cooked,diced chicken
3 c cooked white rice
2 avocados, peeled, diced, and tossed with
1 tbsp. lemon juice (to prevent browning)
1/4 c chopped onion
1 c mayonnaise
1-2 tsp. pepper
1 tsp. salt
1/4 c chopped parsley


Directions:
Mix all ingredients and chill. Spread on roll open faced. Garnish with lemon wedge.

Personal Notes: You can make it with canned chicken breast for a quick mix.
